Cocido Montañés

Ingredients for 4 people :300 grams of white beans , 1 tip of ham, 100 grams of bacon, a potato , a small cabbage, 150 grams of pork ribs , 2 sausages , salt to taste.
 
Put the beans to soak the night before. Put them in a pot with cold water and bring it closer to the fire when it starts to boil. Change the water and add some ham, ribs, bacon and sausage. When boiling, let it froth. Simmer beans, meat and sausage for 45 or 50 minutes over low heat.
 
Meanwhile, remove the tough outer leaves and stem of the cabbage and cut into very thin strips.
 
Going through water, drain and add to the pot. Stir and simmer for half an hour .
 
Cut the sausages into thick slices and add them along with the peeled, washed and diced potato to the pot. Keep on cooking for 15 to 20 minutes until everything is tender. Serve in hot clay pot.
